Opened in July 2011, Rice & Company features a pleasant surprise of fresh, tasty and healthy Asian cuisine not watered-and fusioned-down for the masses. Choose tried-and-true edamame or sashimi starters, or go in a savory direction with pan-fried pork potstickers or a steaming bowl of War Wonton soup with slabs of roast pork. Undoubtedly, seafood is a staple here, but diners also can find elegant adaptations of takeout favorites and a comprehensive menu of delicious Cantonese cuisine. Rice & Company opens daily for dinner at 5 p.m.

: Just one flight up from GhostBar, the Palms Hotel decided to open a restaurant on the 56th floor called Alizé. Named after gentle trade winds that sweep through the French Caribbean Islands, diners can almost imagine them wafting by as they soak in the views from the restaurant’s three walls of floor-to-ceiling windows. Here amidst candlelight, romance and an award-winning wine list, Alizé’s Chef Andre Rochat puts his gourmet Mediterranean cuisine on the table and the view of the entire Strip in the palms of your hands.

Binion’s Ranch Steakhouse
: Notably one of the favorite haunts of the famed Rat Pack, Binion’s Ranch Steakhouse is a romantically lit penthouse restaurant that offers a view of the Las Vegas skyline at night. Binion’s is known for its outstanding offerings of fine steaks and succulent prime rib amidst vintage Las Vegas décor. Before enjoying a glimpse of the past and enjoying this fine eatery’s spectacular views, the restaurant’s access point—a glass elevator suspended outside Binion’s Hotel tower—lifts you up 24 floors while you watch the ground fall away and the views appear.

Eiffel Tower Restaurant at Paris Resort
: A signature feature of the Las Vegas skyline, the Eiffel Tower at Paris Las Vegas is a half-scale reproduction of France’s most famous landmark, even down to having a restaurant inside. With French cuisine by Chef J. Joho, it is a feast for the stomach as well as the eyes. Take the glass elevator all the way to the 460-foot-high top of the tower to experience breathtaking, panoramic views from the most romantic spot in all of Las Vegas; or better yet, visit the restaurant on the 11th floor—still more than 100 feet up—where that glass elevator opens up into the action of the restaurant’s fast-paced kitchen. GhostBar at Palms Hotel
: The half-indoor-half-outdoor GhostBar is located on the 55th floor of the Palms Hotel. House of Blues Foundation Room at Mandalay Bay: An exclusive elevator ride for those with reservations brings them to the House of Blues Foundation Room and its breathtaking view of Las Vegas from the crowning 43rd floor of the Mandalay Bay. Located at the extreme southern end of the Strip, the House of Blues Foundation Room’s outdoor patio exposes guests to unmatched and virtually unobstructed views of the glitz and glory of the famous Las Vegas skyline. Sit and dine in this glorious outside space as a DJ spins a variety of tunes nearby, or take advantage of its restaurant, exotic lounge, seven secluded rooms or banquet space.
